We are on a health kick right now, and we are going to try to take as many animal products out of our diet as possible. I know I have said this before, but after watching some “Down-With-Meat” program about how much healthier you can be without animal products, we have really kicked this eating-healthy thing into gear. Want to see proof?
I have never had so many fruits and veggies in my fridge! Plus there are more in my pantry and on my cupboard! I went to the market yesterday and bought some things that were unfamiliar to me until yesterday. I had to ask someone what a parsnip was and where to find it. But, I guess it’s worth it for a healthier me. Are you wondering what all that paper towel is for on my greens? Well that was a tip I got from Rachel Ray…love her tips! She said to keep a damp paper towel wrapped around greens to keep them crisp and fresh longer. It works! I also put my fresh parsley in a cup of water with the bag loosely tied around the top. I do this with cilantro as well. I have my hummus made and some freshly ground flax seeds. I know there are still some eggs and lunch meat in there, but once that’s gone we won’t be getting any more of that…..well maybe eggs. I’m having a hard time figuring out how I will do with out dairy products, especially cheese and yogurt. So we’re not cutting those out right now.
