Roasted Greek Potatoes with Feta Cheese Recipe
2/3 c water
½ c olive oil
3 tbsp lemon juice
4 garlic cloves, minced
2 tsp dried oregano
1 tsp salt
½ tsp pepper
3 lbs. potatoes (about 6 medium) each cut into 8 wedges
¾ c crumbled feta cheese
- Preheat oven to 450. In a bowl whisk the first 7 ingredients. Arrange potatoes evenly in a shallow roasting pan. Pour water mixture over the top.
- Roast 40-50 minutes or until potatoes are golden brown and tender. Sprinkle with cheese.
I was sadly unimpressed with this recipe. I’m not sure if I did something wrong or what, because with these ingredients I expected something very tasty, especially with all that garlic and feta cheese! If you make these let me know what you think!
