I recently had brunch at a cute little restaurant called Sweet Melissa’s. I normally don’t get pancakes or waffles at restaurants, because that is something I could easily have at home. However, this restaurant served pancakes as a side with a meal. But they weren’t just regular pancakes, they were yogurt pancakes, and they were SUPERB! I had to come home and find a recipe. As luck would have it, I found this recipe from http://allrecipes.com/recipe/apple-yogurt-pancakes/, and this one tasted almost exactly like the ones at Sweet Melissa’s!
Ingredients:
2 eggs
1 2/3 cups milk
1 (8oz) container plain yogurt
¼ cp vegetable oil
2 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 ½ tsp ground cinnamon
1 apple-peeled, cored and diced
Steps:
1. In a large bowl, stir together the eggs, milk, yogurt and oil until well blended. Combine the flour, baking powder, baking soda, salt and cinnamon, stir into the milk mixture until smooth. Fold in chopped apple.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each cake. Cook until bubbles form in the cakes and the bottoms are golden brown. Flip and cook the other side. Serve warm with syrup or jam.
There were a few changes I made to this homemade pancake recipe. Instead of plain yogurt, I used vanilla flavored. Also, I did not add the apples the first time I made this. I may try adding the apples when I make it again tomorrow. Either way, these pancakes are amazing. I’ll never go back to regular pancakes again.
