Ice Cream Birthday Cake Recipe
4 c birthday cake flavored ice cream, or any flavor of your choice (I used vanilla bean)
1 funfetti cake mix (regular size)
1 carton (8oz) frozen whipped topping, thawed
- Line a 9 inch round pan with plastic wrap. Spread ice cream into pan. Freeze 2 hours until firm.
- Prepare and bake funfetti cake mix according to directions on the package, using 2 round 9 inch pans. Cool 10 minutes in pans, then cool complete on a wire rack.
- Trim the tops of cakes if desired, to flatten. (I skipped this and just put the domed part face down on the serving plate, and the other domed part facing up on the top layer. Invert ice cream onto the bottom cake layer; remove plastic wrap. Top with remaining cake layer. Spread whipped topping over top and sides of cake. Decorate with sprinkles as desired. Freeze 2 hours longer or until firm.
This cake was definitely a hit! Everyone loved it; it wasn’t too sweet. Very fun alternative to the everyday birthday cake and much cheaper than buying it! It wasn’t even hard to make!
