Baked Beans Side Dish Recipe
1 lb dried navy beans
¼ lb. sliced salt pork belly or bacon strips, chopped
1 ½ c water
1 medium onion, chopped
½ c molasses
1/3 c packed brown sugar
1/3 c rum or unsweetened apple juice
2 tsp ground mustard
½ tsp salt
½ tsp pepper
- Sort navy beans and rinse in cold water. Place beans in large bowl; add water to cover by 2 in. Let stand, covered, overnight.
- Drain and rinse navy beans, discarding liquid. Transfer beans to greased 3qt. slow cooker. Add salt and pork belly. In a small bowl, combine remaining ingredients. Stir into slow cooker.
- Cook, covered, on low 9-11 hours or until beans are tender.
This tasted very much like the beans straight from the can, only I’m sure these are much healthier! Great addition to the main meal at the cookout.
