BLT Salad Side Dish Recipe
1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
1 small tomato, seeded and chopped
2 c frozen peas (about 10oz)
1 c mayo
2 tbsp sugar
1 c (4oz) shredded cheddar cheese
12 bacon strips, cooked and crumbled
¾ c dried cranberries –I did not use
- In a 3 qt or 13×9 glass dish, layer first six ingredients. In a small bowl, mix mayo and sugar; spoon over salad, spreading to cover.
- Sprinkle top with cheese, bacon, and cranberries. Refrigerate, covered, overnight.
This is the perfect side dish to brighten up a meal or to bring to a cookout. Finish it quickly, though. It doesn’t store very long, and don’t forget to keep it on ice at a party!
