Creamy Avocado Pasta Recipe
1 medium ripe avocado, pitted
½ of a lemon’s juice and zest
2-3 garlic cloves
Pinch of salt
¼ cup fresh herbs-parsley or basil or both
2 tbsp olive oil
1/3 cup walnuts chopped and toasted (I didn’t use)
Pepper to taste
Pasta to serve 2-3
Begin by cooking pasta.
Meanwhile, make sauce. Place lemon juice, garlic and olive oil in a food processor. Process until fairly smooth. Add avocado, salt, herbs. Process until very smooth and creamy.
Toss pasta in the sauce. To serve, garnish with fresh parsley, pepper, lemon zest and walnuts.
