Quick and Easy Vegetable Soup Recipe
5 carrots, sliced
2 stalks celery, sliced
1 onion, sliced
about 1 garlic clove minced-add to taste, I love garlic
egg noodles – cooked
Put all ingredients into about 6 cups of broth of your choice- I used chicken broth. Bring to a boil, reduce heat and cook for about 20 min. You could really put any veggies you want into this soup. Experiment and see what you like. My husband said I should have put beans in it, so next time I will probably add some beans.
It’s a quick, easy, and healthy meal for any night, especially those cold winter nights.
