
Pumpkin Sloppy Joes Recipe:
Ingredients
1/2 pound lean ground beef
3 tbsp finely chopped onion
1/4 cup ketchup
2 tbsp tomato juice
1/4 tsp chili powder
Dash ground cloves and nutmeg
Dash pepper
2/3 cup canned pumpkin
2 hamburger buns, split
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
Add ketchup, tomato juice, chili powder, cloves, nutmeg and pepper; mix well. Bring to a boil. Stir in pumpkin. Reduce heat; cover and simmer 15-20 min or until heated through. Serve on buns.
This recipe was yummy. It reminded my of my childhood: put some potato chips or pickles on top! I didn’t use cloves, just nutmeg. I also used Bloody Mary Mix instead of tomato juice, because that’s all I had. But I think it adds some extra flavor.
